Caramel sweets with nuts

Delicious homemade caramel candies with chopped pecans. For cooking, you need a thermometer for caramel and wax paper for wrapping. Ingredients for the recipe:

  • 110 gr. butter plus more to lubricate the mold
  • 1 tbsp. brown sugar
  • 1 tbsp. granulated sugar
  • 1 tbsp. dark corn syrup
  • 470 ml. fat cream
  • 2 tbsp. chopped pecans
  • 1 tsp vanilla extract
  • Special equipment: caramel thermometer

Recipe preparation:

  1. Abundantly sprinkle a baking dish 23x30x5 cm culinary spray; cover it with parchment paper and grease the paper butter.
  2. In a large stewpan mix brown sugar, granulated sugar, corn syrup and 1 tbsp. cream. Heat until mixture won’t start to boil. Slowly pour in the remaining 1 tbsp. cream into the mixture stirring while it boils. Place the caramel thermometer in stew-pan and simmer over medium heat until its temperature reaches 118 ° C. Remove from heat and add butter, chopped pecans and vanilla extract. Pour caramel into prepared form. Chill the caramel in the refrigerator so that it hardened, but did not become hard, for about 1 hour.
  3. Cut the caramel mass into squares with a side of 2.5 cm. Cut the wax paper into squares with a side of 10 cm and wrap each candy in a separate wrapper. Keep in the refrigerator. Before take the sweets out of the refrigerator and let them stand for a while, to make them softer.
