Cake “Alexander”

First-time cake popular in Latvia and East Germany baked in Riga on the occasion of the visit of the Russian emperor to Latvia. Despite its simple recipe, the cake turns out unusually tasty thanks to a harmonious combination of cakes, berry filling and icing sugar. Cake “Alexander” consists of three sand cakes, layered with raspberry jam and topped with lemon sugar with icing. Usually it is made in the shape of a rectangle and cut into небольшие квадраты. Ingredients for the recipe:

  • 1 tbsp. Sahara
  • 1 tsp vanilla extract, optional
  • 3 tbsp. flour
  • 0.5 tsp salt
  • 2 tbsp. (460 gr.) Butter
  • 1 tbsp. pitted raspberry jam
  • 3 tbsp. l lemon juice
  • 2 tbsp. powdered sugar

Recipe preparation:

  1. In a large bowl, put flour, sugar, salt (and vanilla, if use). Put butter in flour and chop, well mixing everything to make the dough come together. Divide the dough into three equal parts. Wrap in cling film and place overnight in fridge.
  2. Let the dough stand at room temperature (to be easier to roll out). Preheat the oven to 180 ° C. Roll each the part between two sheets of wax paper into the layer according to your size baking dishes (e.g. 25 x 40 cm). Remove the paper from above. Put the dough on paper in the form. Bake 10-12 minutes to golden yellow so that the cake does not darken. Be careful, as it can quickly burn.
  3. Remove the cake from the oven. Allow to cool for 2 minutes. Put the baking board on the pan and turn it over to get it cake Remove the paper. Lubricate the cake with half the whole jam. Via another board carefully lay the second layer on top of the first. Spread with the remaining jam. Bake the third cake and put on top on the cake.
  4. Mix powdered sugar with lemon juice. Butter the cake thin a layer of the resulting glaze. Allow to solidify. Chop small rectangles 4 x 8 cm. and serve with good strong coffee.
