Blueberry Kefir Cupcake

The recipe for a cupcake with blueberries, cooked on kefir. Cake sprinkled with sugar and served with strawberries in its own juice. Difficulty: easy Servings: 10 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

For a cupcake:

  • 3 tbsp. and 2 tbsp. l flour
  • 2.5 tsp baking powder
  • 1 and 1/4 tsp salt
  • 1 and 3/4 Art. granulated sugar
  • 1/4 Art. vegetable oil
  • 230 gr. unsalted butter at room temperature, and some more for the form
  • 4 eggs at room temperature
  • 1 tsp vanilla extract
  • 3/4 Art. kefir with 2% fat
  • 2 tbsp. blueberries (approximately 550 ml.)

For garnish and decoration:

  • 1-2 tbsp. l granulated sugar
  • 2.5 tbsp. powdered sugar
  • 4-5 Art. l milk
  • 1 tbsp. l (15 gr.) Unsalted butter temperature
  • 2-3 tbsp. halved strawberries quarters (approximately 550 ml.)

Recipe preparation:

  1. Prepare a cupcake: preheat the oven to 175 degrees. A round cake pan with a hole in the center of 2.8 liters. generously grease with butter. In a medium bowl, mix 3 tbsp. flour baking powder and salt. Beat with a mixer at high speed for at least 5 minutes 230 gr. butter, granulated sugar and vegetable oil, scraping the mixture from the walls of a rubber bowl shoulder blade. As a result, the mixture should be airy. Turn down mixer speed to low, add eggs one at a time, then add vanilla. Add about 1/3 of the flour mixture and half the kefir. Stir almost until smooth. Add another 1/3 of the mixture with flour and the remaining kefir. Mix thoroughly, scrubbing all mixture from the walls of the bowl. Add the remaining flour and whisk another 30 seconds. At the end of the dough, knead manually.
  2. In a small bowl, mix the blueberries and the remaining 2 tbsp. l flour. Pour 1/3 of the dough evenly into the prepared dish. From above put half the blueberries. Cover another 1/3 of the dough. Flatten cupcake surface. Put the remaining blueberries on top, then – remaining dough. Flatten the surface. Bake for 1 hours – 1 hour 10 minutes until golden brown. Toothpick stuck in the middle of the cupcake, should remain clean. Remove the cupcake from the oven and let cool without removing from the mold. Small sharp knife swipe along the edge of the mold to free the cupcake. Form turn over, remove the cupcake and cool completely.
  3. Meanwhile, prepare a side dish and decoration: in a bowl mix strawberries and granulated sugar. Leave on for 30 minutes to berries gave juice. Before serving, cook glaze: in a bowl, mix powdered sugar, butter and 4 Art. l milk. If the glaze is too thick, add little by little to 1 tbsp. l milk. Pour the icing on top of the cupcake, giving drain to her sides. Serve the strawberry muffin in your own соку.
