Banoffi is a traditional delicious English dessert that cooked without baking. Everyone who tried my cooking Banoffi was delighted: friable sand sweet-salty texture base, thick and viscous creamy caramel with slices bananas, an airy curd cream that sets off the sweetness of the filling. The hardest part in this recipe is to make caramel, but I advise you to learn how to do it, because according to this recipe caramel it turns out exactly the same as pour ice cream and desserts in expensive restaurants and culinary. Well, I if you are extremely lazy, use boiled condensed milk, but it will be worse.

  1. First, chop the cookies with a blender to the state of flour. We pour in a bowl.
  2. Then chop the straw into a state of small crumbs. Pour to the liver.
  3. Melt butter (100 g) in the microwave or on water bath. Pour the oil a little bit and first stir with a spoon, then hands. You should get a wet sand structure.
  4. Take a shape or a ring. Ideally, board the side with acetate film, but since the oil is oily, you can try without it. Of sand crumbs form the basis with sides about 4 cm high. We put it in the refrigerator and cook the caramel.
  5. Pour sugar into a stewpan with a thick bottom (this is important!) And pour water. We put on a minimum fire and heat. DO NOT NEED ANYTHING THE WHOLE COOKING PROCESS !!! Sometimes you can shake the bucket, no more. When you are 100% sure that the sugar is completely dissolved and boiled, then you can add fire to medium. From now on You can’t leave the stove. Caramel is easy both to cook and digest and it will be bitter. As soon as you see amber-honey color, immediately remove from heat.
  6. Pour 125 g of warm cream into a thin stream. See how right away everything boils and foams? Be careful. Caramel burns worse 5 times oil.
  7. Add 80 g of butter in slices and stir until homogeneity. Pour caramel into a bowl so that it does not heat up from bottom of the stewpan. Pour caramel onto a sand base. It took me 2/3 caramel.
  8. Cut the bananas into circles and drown a little in caramel. Refrigerate for an hour to cool the caramel and froze.
  9. For cream, beat 100 ml of cream 33%, mix with a mixer with 100 g cottage cheese (I take Hohland or Almette). Can smudge cream on the cake, and you can use a pastry bag and nozzles. Serve immediately or leave in the refrigerator.
