  • 1/3 Art. milk
  • 1 sachet of dry active yeast
  • 2.5 tbsp. baking flour and a little more for dusting
  • 2 large egg yolks plus 2 eggs
  • 3 tbsp. l granulated sugar
  • Finely grated zest of 1 lemon
  • 1 tsp salt
  • 0.5 tsp freshly grated nutmeg
  • 165 gr. butter, melted and cooled and slightly for a bowl

Filling and Glaze

  • 0.5 tbsp. light raisins
  • 1/4 Art. bourbon
  • 3/4 Art. brown sugar
  • 2/3 Art. fried pecans chopped
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tsp grated orange peel
  • 1/4 tsp salt
  • 1 dry bean or plastic baby figurine
  • 0.5 tbsp. powdered sugar
  • Purple, green and golden decorative sugar

Recipe preparation:

  1. Pie. In a saucepan, heat the milk without bringing to boiling. Pour it into the bowl of the food processor, add the yeast and mix. Pour 0.5 tbsp. flour and put egg yolks. Mix everything. Spread the remaining 2 tbsp evenly on top. flour but do not mix. Cover and set aside for 1 hour 30 minutes.
  2. Add 2 eggs, granulated sugar, lemon zest, salt and nutmeg nut. Knead sticky dough for 1 minute. Without turning off combine, slowly pour in butter and knead slightly sticky com test. Transfer it to a thinly coated bowl butter, and cover tightly with cling film.
  3. Put the dough to rise in a warm place for 3 hours. Then lay it on a clean work surface and knead quickly. Roll the ball and put it back in the bowl. Cover food tight film and refrigerate overnight.
  4. Stuffing. Pour raisins into bourbon in a small saucepan and set to swell over moderate heat. Then remove the pan from fire and sprinkle brown sugar, pecans, vanilla, cinnamon, orange zest, salt and put a bean or a plastic figure. Mix everything.
  5. On a floured work surface, roll out the dough into rectangle 50 x 17 cm. long side to itself. Evenly distribute the filling on the dough, stepping 2.5 cm above and below. Roll a tight roll out of the dough and press the seam.
  6. Place the roll seam down on a baking sheet for baking. Fold it with a ring, pinch the roll ends to to a friend. Lightly cover with cling film and place for 2 hours in a warm place so that the dough doubles.
  7. Preheat the oven to 170 ° C. Bake roll until golden crusts, about 4 minutes. Cool it on a wire rack.
  8. Frosting. Mix powdered sugar in 3 tbsp. l water. Spread on the cake 3 tbsp. l glaze. Sprinkle with decorative sugar in wide stripes and sprinkle with icing.
