Provencal spicy provence sauce Skolosok

A very unusual recipe for spicy provence sauce told me one good friend. Having prepared this sauce, you will immediately forget about purchased sauces because provence sauce is just supreme class.

Spiced Provence Sauce

To prepare spicy sauce, we need:

  • 3-4 pcs red large bell peppers
  • 2-3 medium eggplant
  • 2 sprigs of rosemary
  • 100 gr green onions
  • 3-4 cloves of garlic
  • 450 ml tomato paste
  • 0.25 kg of granulated sugar
  • 0.25 liters of dry white wine
  • 0.2 l of wine white vinegar
  • 2 teaspoons of salt
  • ground black pepper

You can prepare a provencal spicy sauce like this:

We clean the prepared vegetables, thoroughly rinse and dry. Grind green onions and garlic. Cut the pepper in half and clean seeds and membranes, cut into small cubes. Eggplant peel and finely chop.

We put all the chopped vegetables in a pan, salt, add ground black pepper, pour in the wine and white wine vinegar. All is well mix and put the pan on medium heat, bring to boiling.

Once the vegetables have boiled for 5 minutes, add the tomato paste, chopped sprigs of rosemary and simmer over moderate heat for 40 minutes, stirring constantly.

Pour hot sauce into sterilized jars, twist and leave to cool in an inverted form. Keep at room temperature or in the refrigerator.

The ingredients in this recipe are taken for about 1 liter of delicious sauce.
