Scrambled Egg Fried Eggs

  • 6 large eggs
  • 1.3 kg pumpkins or zucchini
  • 2 tbsp. l olive oil
  • 4 feathers of green onions, finely chopped into rings, 3 tbsp. l leave to sprinkle
  • 1 jalapeno pepper, peel and chop
  • 3 tbsp. l chopped fresh parsley
  • 1/4 tsp grated fresh nutmeg
  • 1 tbsp. l (15 gr.) Butter
  • 1/2 tbsp. grated cheese, pepper jack or mature cheddar
  • Salt and Freshly Ground Peppers

Recipe preparation:

  1. Grate the pumpkin, put in a colander, add 1 tbsp. l salt and mix, leave in the sink for 40 minutes to stack the juice, then squeeze the pumpkin thoroughly.
  2. Pour olive oil into a preheated pan with a removable handle oil, put onions, jalapenos and salt, fry on medium-high heat until cooked, about 3 minutes. Add grated pumpkin and cook, stirring, until soft, about 7 minutes. Sprinkle with parsley, nutmeg, pepper to taste. Fry another 1 minute.
