Pickled olives in citrus marinade

Conventional olives in brine can be given more flavor by pickling them in citrus marinade with curry seasoning, tarragon, red pepper and garlic. Ingredients for the recipe:

  • 450 gr large green pitted olives washed
  • 1 clove garlic, minced
  • 0.5 tbsp. olive oil
  • 1 tbsp. l red wine vinegar
  • Juice and zest of 1 lemon
  • 0.5 tsp red pepper flakes
  • 0.5 tsp dried tarragon
  • 1/4 tsp curry powder

Recipe preparation:

  1. Pour olives in cool water and leave to soak at least for 5 minutes or up to 5 hours.
  2. In a volume of 1-1.5 liters. mix all other ingredients. Add olives and mix or shake to mix everything. Make sure all olives are immersed in the marinade. Leave for 1 day in cool dry place. Then refrigerate for 1-2 days and serve.
