Grilled chicken
- 2 boneless and skinless chicken breast fillets
- 3 tbsp. l olive oil
- 5 torn basil leaves
- 1 clove garlic, sliced
Pickled cherry tomatoes
- 2 tbsp. cherry tomatoes
- 2 tsp coriander seed
- 1/4 thinly chopped red onions
- 5 tbsp. l olive oil
- 2 tbsp. l ginger juice
- 2 tbsp. l thinly sliced basil leaves
- 1 tbsp. l thinly chopped mint leaves
- 1 tbsp. l sherry vinegar
- 1 clove garlic

Recipe preparation:
- Cook pickled cherry tomatoes: fry in a small frying pan over medium heat coriander seeds in 3-5 minutes. until you feel their aroma. Shift to mortar and crush them with a pestle. Allow to cool.
- Bring the water to a boil in a medium saucepan. Make small an “x” cut at the bottom of each tomato. Blanch Tomatoes Cherry for 1 min. and transfer them immediately to a large bowl, filled with ice water (ice bath). Let them cool and then peel the tomatoes and discard the skins.
- In a medium-sized bowl, mix coriander, peeled tomatoes, onions, olive oil, ginger juice, basil, mint, vinegar and garlic. Season with salt and pepper, cover and let the tomatoes in marinade stand at room temperature for 4 hours.
- Cook grilled chicken: mix olive oil, basil and garlic in a large bowl. Add the chicken breasts, make sure the meat is completely coated with marinade on all sides. Cover and set to marinate in the refrigerator for at least than for 2 hours.
- Preheat the grill to medium temperature. Take the chicken out marinade and towel dry. Sprinkle with salt and pepper. Put grill chicken breasts and fry for 5 minutes on each side, depending on how hot your grill is, or before ready. Serve grilled chicken with pickled tomatoes from above.
