- Wash lemons and limes, peel the zest from them with a special knife or using a fine grater. We don’t touch the white part because it is bitter.
- Mix the zest with sugar and leave for a while.
- Squeeze out juice from bald lemons and limes. Pour juice into sugar, mix and put in a water bath. Into this mixture add butter in small pieces and mix until complete dissolution.
- Shake the eggs with a whisk until smooth. Pour them thin trickle into the mixture and hold in a water bath, stirring constantly, until our cream thickens.
- Remove the cream from the heat, let cool slightly and pour into jars.
