Beet processing is a rather dirty job: before you start cover the work surface with wax paper or plastic film. Wear disposable gloves or wipe hands cut lemon.

Recipe preparation:
- Peel the raw beets with a peeler, which you use for potatoes.
- If you want to squeeze juice from boiled beets, remove the peel, scrubbing fingers under running water.
- To squeeze beet juice, finely grate raw beets (no need to peel) on a surface with gauze or waxed paper. The finer the holes in the grater, the more juice you receive.
- Collect the grated beets in cheesecloth, wrap tightly and squeeze the juice into a large measured jug.
- Pour the beet juice into a container and store in the refrigerator for up to 3 days. It is very saturated, so we recommend mixing with fruit and / or vegetable juice, for example from carrots and orange.
