Homemade ketchup

Ingredients for the recipe:

  • 1.5 kg canned whole skinless tomatoes
  • 1/4 Art. tomato paste
  • 3 tbsp. l vegetable oil
  • 2 tbsp. chopped onion
  • 1 tbsp. l chopped ginger
  • 4 garlic cloves, finely chopped
  • 2 tsp mustard powder
  • 1/2 tsp ground allspice
  • 1/4 tsp cayenne pepper
  • 2 bay leaves
  • 2/3 Art. light brown sugar
  • 1/2 tbsp. cider vinegar
  • 1 tbsp. l molasses
  • Coarse salt

Recipe preparation:

  1. In a large saucepan or roasting pan over high heat vegetable oil. Add onions and cook over medium heat 5 minutes, stirring occasionally until it becomes soft and transparent. Add ginger, garlic, mustard powder, allspice and cayenne pepper and cook, stirring, 1 minute. Add tomato paste and cook another 1 minute, then add the tomatoes. Shuffle wooden spoon, scraping from the bottom burnt pieces. Take off pan from the fire.
  2. Grind the tomato mixture with a blender to a homogeneous consistency, then put back into the pan. Add bay leaf brown sugar, vinegar, molasses and 4 tsp. salt. Bring the mixture to boil and cook over low heat for 45-60 minutes, stirring occasionally, so that the mixture does not burn until it is thick enough. Take out the bay leaf and let the ketchup cool. Put ketchup in airtight container and refrigerate for up to 2 weeks.
