Ingredients for the recipe:

  • 1 tbsp. dried chickpeas
  • 1 tbsp. l baking soda
  • 1 clove of garlic
  • Juice 2 lemons
  • 1/2 tsp ground cumin
  • 1/2 tbsp. tahini (sesame paste), well mixed
  • 1/4 Art. olive oil and a little more to spray
  • 1/4 tsp red pepper flakes
  • 1/4 tsp paprika and a little more for sprinkling
  • Coarse salt
  • Pita bread and / or vegetables chopped into large strips for serving

Recipe preparation:

  1. Sort out the chickpeas and discard all the small pebbles, carefully Rinse. Pour chickpeas into a large bowl and pour 8 tbsp. water; add baking soda. Leave the chickpeas to soak at room temperature, at least 12 hours, and preferably all day.
  2. After time, drain and rinse thoroughly. Transfer chickpeas to a large pot, add 10 tbsp. water bring until boiling and then cook another 5 minutes. Next, decrease temperature and cook at low boil for another 45 minutes, until chickpeas will become soft, periodically removing foam.
  3. Leave 1 cup of liquid from the preparation, drain the rest and rinse the chickpeas under cold water. Put chickpeas in a food processor and grind it in mashed potatoes. Without turning off the combine add tahini, olive oil, garlic, lemon juice, cumin, pepper flakes, paprika, 1 tsp. salt and a glass of liquid from the preparation. Hummus should be a homogeneous consistency, on its preparation you it will take about 5 minutes.
  4. Transfer mashed potatoes to a bowl, drizzle with olive oil and sprinkle paprika. Serve hummus with bread and vegetables. Ready hummus can keep in the refrigerator for 3-4 days. We offer a recipe for hummus from chickpeas in a slow cooker.
