  • 1 tbsp. сметаны
  • 1 tsp coarse sea salt
  • Ground black pepper

Recipe preparation:

  1. Prepare a medium sized bowl of ice water. In the bowl electric stationary mixer by installing a whisk, gradually whip the cream and sour cream. Increase mixer speed and keep whipping until the cream is separated and the mixture thickens.
  2. Using a silicone spatula, collect oil from the edges of the bowl. As a result whipping you have a certain amount of liquid. This fluid – buttermilk. Collect the butter in a bowl and put in a double layer gauze or a thin dishcloth and dip it in ice water, to flush buttermilk off the surface. Sprinkle with salt and pepper to taste. Put the butter in a bowl and roll it into a bowl or sausage with food film. Use immediately or store in refrigerator. Output: 350 gr.
