Yogurt
- 4 tbsp. fat milk
- 1/4 Art. skimmed milk powder
- 1/4 Art. maple syrup (optional)
- 1/4 Art. fresh yogurt, or sourdough with active cultures
Apple Compote
- 6 tbsp. peeled and diced green apples
- 1/4 Art. brown sugar
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- A pinch of salt
- 1/4 Art. water

Recipe preparation:
- Make an apple compote: mix in a saucepan with thick bottom apples, brown sugar, vanilla extract, ground cinnamon, salt and 1/4 tbsp. water. Cook, stirring, with medium temperature, until the apples soften, about 30 minutes.
- Make homemade yogurt: heat milk (Milk should languish, but not boil.) in a large saucepan over low heat, to 85 C. Remove from the stove and stir slowly with a whisk. Add milk powder and maple syrup. Cool the milk mixture to 40 C., in within 20 to 30 minutes. Mix with plain yogurt.
- Pour the milk mixture into a glass bowl. Cover with foil and make a few holes. Put in a warm place (30 – 40 C.) at 12 – 18 hours. (The longer you hold the milk mixture, the thicker there will be yogurt.)
- Place the yogurt in the refrigerator for 8 hours to cool. Before mix with apple compote.
