- 1 large shallot onion, chop finely
- 1 small tomato, chop finely
- 2 tbsp. l white wine vinegar
- 2 tbsp. l chopped fresh tarragon
- Coarse salt and freshly ground pepper
- 230 gr. green bean
- 3/4 Art. cornmeal
- 1/2 tbsp. cream with a fat content of 10%

Recipe preparation:
- Melt in a pan 1/2 tbsp. l (30 gr.) Butter. Add shallots and sauté at medium temperature in within 3 minutes Add tomato, vinegar, 1/4 tbsp. water, 1 tbsp. l tarragon and 1/4 tsp. salt and pepper; bring to a boil and cook another 5 minutes.
- Place green beans in a microwave bowl. Add 1 tbsp. l water, cover with a film and cook in microwave for 4 min. Salt and pepper.
- Pour cornmeal into a shallow bowl. Roll trout in cornmeal, shake off excess. Heat in a separate pan 1/2 tbsp. l (30 gr.) Butter. Put the fillet in a pan and fry on both sides until golden brown, about 5 min. Transfer the fish to a dish.
- Add cream to the sauce, bring to a boil and cook until slightly thicken, about 3 minutes Stir the remaining 1 Art. l tarragon and 1/2 tbsp. l (30 gr.) Butter, add salt to taste. Serve the fried trout fillet with green beans and the sauce.
