- 2/3 Art. extra virgin olive oil, portioned
- Coarse salt and freshly ground black pepper, to taste
- 1/2 tbsp. freshly grated pecorino cheese

Recipe preparation:
- In a bowl of a food processor, combine basil, garlic and cedar nuts and chop coarsely in pulse mode. Add 1/2 tbsp. oils and beat until smooth. Salt and pepper. If you will use the sauce immediately, add the remaining oil and again beat in pulse mode until smooth. Put the pesto in a large serving bowl and stir in cheese. If you are going to freeze the sauce, transfer it to an airtight container and pour over the remaining oil. Can be stored in the freezer up to 3 months. Defrost and mix the cheese before serving.
