Cocktail
- Absinthe for rinsing a glass
- 2 sprigs of fresh tarragon
- 45 ml. genie such as monkey 47
- 30 ml syrup from Demerara sugar, see recipe below
- 30 ml fresh lemon juice
- 15 ml Green Chartreuse liquor
Syrup from Demerara Sugar
- 1 tbsp. sugar demerara

Recipe preparation:
- Rinse chilled cocktail glasses with absinthe, then decorate the glasses with tarragon. Pour gin, sugar syrup into the shaker, lemon juice, liquor and put the remaining sprigs of tarragon. Crush tarragon with a pestle, add large ice cubes and shake vigorously.
- Strain the cocktail into the glasses through a double sieve, and Serve. Sugar syrup: In a small saucepan, mix the sugar. Demerara with 1 tbsp. water and bring to a boil. Heat while stirring until sugar dissolves. Remove from heat and cool completely. Store syrup in the refrigerator for up to 1 month.
