When smoking meat on the grill or barbecue, it is periodically lubricated mop. Mop (English mop – mop) is a special sauce, which with with a brush similar to a small mop, apply to meat in smoking time so that it does not dry out and is saturated an additional bouquet of aromas and tastes. Mop is different from standard barbecue sauce that does not contain sugar and tomatoes, which, with prolonged smoking, spoil the taste of meat. Therefore, they can smear meat during the whole process of smoking, while the sauce barbecue is applied only towards the end of smoking. Share with friends:
Time: one hour. 20 minutes. The recipes use measuring containers with a volume of: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (st.) – 120 ml 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml. 1tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.
Ingredients for the recipe:
- 1 tbsp. l (15 gr.) Butter
- 2 tbsp. l finely grated peeled ginger
- 2 shallots, peeled and finely chopped
- 6 garlic cloves, peeled and crushed
- 1.5 tbsp. bourbon
- 1 liter sweet apple cider
- 1 tbsp. apple jelly
- 1/4 Art. molasses
- 1 bay leaf
- 2 tsp coriander seed
- 0.5 tsp black pepper peas
- 2 sprigs of fresh sage or 1 tsp. dried sage
- 2 tbsp. l lemon juice
- 0.5 tsp coarse salt

Recipe preparation:
- In a medium-sized saucepan over medium heat, melt butter. Add ginger, shallot and garlic. Fry constantly stirring for about 5 minutes until the vegetables are soft and will get a golden hue. Remove the pan from the heat and stir bourbon.
- Put the sauce on the fire again and with a wooden spoon scrape off pieces of vegetables burnt at the bottom of the pan. Pour in the cider jelly, molasses, put bay leaf, coriander seeds, black pepper and sage. Bring the sauce to a boil and cook for 1 hour, until part will not evaporate and will not remain approximately 1.5 tbsp. sauce. Strain the sauce and add lemon juice, salt and black pepper to taste.
