Cauliflower rice is just a godsend for those who adheres to a healthy diet. Being outwardly like rice or couscous, this vegetable side dish is much healthier, contains less calories, carbohydrates and sugars and more fiber. He is perfect combined with meat dishes, and in itself it turns out very tasty if mixed with herbs and roasted almonds. Besides of this, cauliflower rice is a great way to introduce healthy vegetable in the diet of children who, to put it mildly, do not favor it. Mix it in half with ordinary boiled rice and serve as a side dish. Small picks are unlikely to notice that not all of the rice in the plate present.

Ingredients for the recipe:
- 2 small heads of cauliflower, sorted into inflorescences, throw strong legs (about 8 tbsp. inflorescences)
- 3 tbsp. l olive oil
- 1 bunch green onion chopped, white and green parts divide
- 1/4 Art. chopped almonds
- 1/4 Art. chopped parsley

Recipe preparation:
- Grind the cauliflower in a food processor bowl until the condition of large crumbs the size of rice grains (see Note). Should get 6 – 7 tbsp. cauliflower rice.
- In a large frying pan over medium heat, heat the olive butter. Sprinkle the white parts of the onion and fry until light golden colors, about 2 minutes. Add cauliflower, 1 tsp. salt and some black pepper. Stir to the cabbage completely covered with oil. Cover and cook, periodically stirring until the cabbage is soft, but still friable, 6 – 7 minutes.
- Meanwhile, fry in a small frying pan over medium heat almonds, stirring constantly, until golden brown, about 3 minutes.
- Remove the cauliflower from the stove and stir in the green onions, parsley and toasted almonds. Transfer to a large bowl and serve. Note: To Cauliflower crushed into a beautiful, crumbly crumb, fill the bowl harvester inflorescences no more than half. Depending on the the size of the bowl you have to divide the cabbage into about 5 servings.
