Carrot Pancakes “Easter Bunny”

Ingredients for the recipe:

  • 1.5 tbsp. premium flour
  • 3 tbsp. l granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 0.5 tsp soda
  • 0.5 tsp fine salt
  • 0.5 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1 and 1/4 Art. yogurt or kefir
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp. finely grated carrots (about 2 small carrots)
  • 55 gr. butter, melted and cooled + optional for frying pancakes
  • 1/3 Art. finely chopped pecans
  • 110 gr. cream cheese, room temperature
  • 1/4 Art. powdered sugar
  • 2 bananas
  • 24 chocolate granules or raisins
  • Honey or maple syrup for serving

Recipe preparation:

  1. Preheat the oven to 110 ° C. Put the pan in the oven, to put ready-made pancakes on it.
  2. In a large bowl, whisk the flour, sugar, baking powder, cinnamon, soda, salt, ginger and nutmeg. Whisk in a bowl medium sized yogurt, eggs, vanilla, carrots and melted butter. Stir the liquid mixture into a dry one. Intervene nuts.
  3. Heat a large non-stick pan over medium fire and butter. When working in batches, fry out half of the whole test 4 round rabbit back pancake backs (approximately 1/4 tbsp. pancake test). Fry until the pancakes are browned from below and will not be covered with bubbles from above, 1-2 minutes.

Of the remaining dough, fry 4 round rabbit-head pancake heads and 8 oval pancakes for paws, using about 2 tbsp. l test to pancake.   5. Beat in a small bowl until smooth. cream cheese, icing sugar and vanilla. Before serving, put on a large pancake in the center of each plate, then put on top small round pancake, making a head. Put it down or lay it out spoon two small dots of curd cream at the bottom a large pancake to give the rabbit paws. Between the paws drop the tail out of the cream.
  6. Peel the bananas and cut off the top and bottom pieces of 5 cm., cut them in half along. From the resulting pieces, make rabbit ears. Cut the remaining banana slices across 8 slices and attach them to the hind legs. Decorate each paw with three chocolate granules or raisins. Serve rabbits with honey or кленовым сиропом.
