- Preheat the oven to 200 degrees.
- We clean the pumpkin and cut into cubes. Put the pumpkin on the form for baking or baking tray. Spray with olive oil (2 tbsp. l.), season with salt and pepper. Bake for about 15 minutes.
- Coarsely chop green onion, cut cherry tomatoes into halves or quarters. We send to bake for another 20 minutes soft pumpkin.
- We shift the vegetables into a deep container and add vinegar, chili flakes and remaining olive oil. Add cilantro and arugula, mix gently and serve.
