- Beat the whites with a pinch of salt until fluffy.
- Add sugar (100g). Continue whipping until peak.
- Add poppy. Beat until smooth.
- Sift the flour and mix gently with protein.

- Pour melted chocolate on top of cookies and flatten out.
- Put in the refrigerator for 2 hours.
