Tulumba (Tulumba) – Turkish sweetness

Tulumba are sweet, golden and crispy pastries – cookies, deep-fried and soaked in aromatic syrup. This dessert is very popular in Turkey and Greece, you can find it in almost every pastry shop and bakery.

To prepare this recipe you will need a pastry bag with a nozzle in the form of an asterisk and scissors to cut the dough right in dishes with oil. The secret is to cook Tulumba on average fire, as a result, the sweetness will well fry inside. By at the end of cooking, soak the hot cookies in cold syrup and let them soak well.

For the test:

  • Water – 2 cups
  • Milk – 1 cup
  • Vegetable or butter – 1/3 cup
  • Sugar – 1 tablespoon
  • Flour – 420 grams
  • A pinch of salt
  • Eggs – 4 pieces
  • Vanilla Extract – 1 Tbsp
  • White wine vinegar – 1 tablespoon
  • Cooking Oil

For syrup:

  • Sugar – 3 cups
  • Water – 2 cups
  • Lemon juice – 1 teaspoon

Recipe preparation:

  1. Let’s start with the syrup. In a small saucepan, mix everything ingredients for syrup and bring to a boil. Let the syrup boil in for 4-5 minutes, until slightly thickened. Set aside and let cool completely.
  2. Let’s get down to the test. Pour milk into a deep pan, water, oil, pour sugar, salt, stir and bring to a boil over medium heat. As soon as the mixture boils and the sugar dissolves, remove the pan from the stove and add all the flour at once. Vigorously mix with a wooden spoon.
  3. Reduce the heat to a minimum and return the pan to the stove. Cook with constant stirring for 30-60 seconds, trying not to burn the mixture. (This item is needed for evaporation liquids).
  4. Transfer the dough into the bowl of the mixer, and at medium speed, good knead the dough, adding one egg at a time. Final dough for Tulumba should be smooth, glossy and thick. Add vanilla extract and white vinegar, mix again.
  5. It’s time to make cookies. For this recipe you you will need a pastry bag equipped with a shaped tip stars with a diameter of 1 cm.
  6. Heat vegetable oil in a pan. Put the dough in pastry bag and squeeze 5 cm, cut with wet scissors straight into the butter. Fry over medium heat, turning over. Delete slotted spoon and lay on a paper kitchen towel.
  7. Dip the cookies in cold syrup and leave for 2-3 minutes. Transfer with a slotted spoon and repeat the procedure with the rest of dough. Serve Tulumba should be cold. Enjoy! We offer to make Turkish sweetness from mashed carrot – Geserier.
