Tortellini – small Italian dumplings that are usually served like pasta. But with them you can cook a delicious light soup. Boil the cheese tortellini in chicken stock and pour on plates, sprinkled with fresh herbs. The highlight of this soup will be parmesan chips. Grated parmesan is laid out in heaps on silicone mat and baked in the oven where it spreads and after cooling it turns into fragrant crispy chips. Recipe preparation:
- Pour the broth into a large pot with a thick bottom. Cover lid and over high heat bring to a boil. Pepper to taste. Add tortellini. Cook over medium heat until al dente about 7 minutes.
