Ingredients for the recipe:
- 1400 gr. beef shoulder sliced in cubes 2.5 cm.
- 1600 gr. manually mashed canned tomatoes in own juice
- 3 peeled dried seedless anchovies
- 2 tbsp. l dried oregano
- 2 tbsp. l sweet paprika
- 2 tbsp. l whole coriander
- 1 tbsp. l cumin seeds
- 1 tbsp. l chili powder
- 3 tbsp. l olive oil
- 2 chopped onions
- Salt and ground black pepper
- 6 chopped garlic cloves
- 1 chopped canned chipotle pepper
- 0.5 sliced jalapenos
- 1 cinnamon stick
- 1 tsp Sahara
- 2 tbsp. l masa harina flour (corn flour)
- Grated Keso Fresco Cheese (Mexican Soft Fresh Cheese from cow or goat milk) for decoration, can be replaced with Adyghe cheese
- Cilantro leaves for decoration
- Lime wedges for decoration

Recipe preparation:
- Place a small frying pan without oil on a slow fire, add anchovy, oregano, paprika, coriander, cumin and chili powder. Fry until spices give flavor, about 2 minutes. Grind spices with a spice mill or food processor in fine powder. Set aside.
- Heat a large pot with a thick bottom over medium heat; add 3 tbsp. l olive oil and onions. Saute until onion will become soft and begin to caramelize, approximately 10 minutes. Dry the beef, sprinkle with salt and pepper. Add meat to pan and cook, stirring often, until it is browned from all parties, about 10 minutes. Add 2 tablespoons of fried mixture spices, garlic, chipotle, jalapenos, tomatoes, cinnamon stick and sugar. Salt and mix well. Add some hot water so that the meat is covered in a liquid. Bring to a boil let simmer under closed lid for 1.5 hours.
- Take out the meat and split it with a fork into the fibers. Put it back to the pan, add masa harina flour and simmer another 10 minutes without lid until thickened. Try and add seasoning to taste.
