Ingredients for the recipe:

  • 900 gr. beef (neck), cut into cubes of 1.2 cm.
  • 900 gr. boneless pork (neck with shoulder blade), cut into cubes 1.2 cm each.
  • 2 cans of pinto mottled beans (425 g each), drain and Rinse
  • Whole peeled tomatoes (can of 820 ml.)
  • 4 dried guajillo chili peppers (coreless)
  • 4 dried chili de arbola (coreless)
  • 1/4 Art. olive oil
  • 2 fresno peppers, chopped
  • 1 chopped red onion
  • 6 cloves of garlic, crush
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2 tbsp. l tomato paste
  • Beef broth (jar of 440 ml.)
  • 1 tbsp. l brown sugar
  • 1 tbsp. l cider vinegar
  • Sour cream, diced red onion and avocado for decoration
  • Corn chips for serving
  • 2 tbsp. l cornmeal

Recipe preparation:
