Potato croquettes

2 large sweet potatoes, unpeeled
2 strips of bacon
3 tbsp. vegetable oil
3 tbsp. l flour with a slide

2 tbsp. l mayonnaise
1 tbsp. l honey
1 tbsp. l mustard
