  1. My eggplant, cut lengthwise into halves, take out the flesh. Salt and bake the boats in the oven for about 20 minutes at a temperature 200 degrees. Fry the pulp in a pan with the addition of 3 tbsp. l olive oil.
  2. Cut vegetables and cheese, combine and add pepper, salt and the remaining olive oil.
  3. Add the eggplant pulp to the resulting filling.
  4. We cover the baking sheet with special cooking paper. The boats stuffed with filling and sprinkle with grated cheese and crackers. Bake in already preheated oven for about 15 minutes. We set the temperature to 200 degrees.
