- 4 ground beef steaks (1 cm thick; weighing approximately 150 gr. each)
- 1 head of cauliflower, cut into inflorescences
- 2 sprigs of rosemary (chop one leaf)

- 1.5 tbsp. a mixture of grated Italian cheeses (approximately 150 gr.)
- 4 tbsp. l (60 gr.) Unsalted butter
- 2 tbsp. l chopped fresh chives
- Ground black pepper
- 1 large shallot, chopped
- 2 cloves of garlic, chopped
- 240 gr. chopped champignons (about 4 tablespoons)
- 0.5 tbsp. sweet marsala wine
- 0.5 tbsp. lightly salted chicken stock

Recipe preparation:
- In a saucepan, mix 2 tbsp. water, cauliflower, a whole sprig rosemary and 0.5 tsp salt and bring to a boil. Cover reduce heat to low and simmer until cauliflower very soft, about 10 minutes. Drain and transfer the cabbage to food processor by removing rosemary. Add cheese and 1 tbsp. l (15 gr.) butter and grind in mashed potatoes. Transfer to a bowl, stir chives, salt and pepper. Cover so that the cabbage does not has cooled down.
