- 900 g spinach (remove coarse stems)
- 3 tbsp. l (45 gr.) Unsalted butter
- 1/4 Art. premium wheat flour
- 2.5 tbsp. milk at room temperature
- Coarse salt
- 1/2 tsp freshly grated nutmeg
- 1 egg of category CO, plus 2 egg yolks
- Freshly ground pepper

Recipe preparation:
- Melt the butter in a skillet over medium heat. Add flour and knead until smooth. Cook while stirring until mixture does not brighten, about 1 min. Remove from heat, add milk, 2 tsp. salt and nutmeg. Put on medium heat again and bring to a boil, stirring constantly. Remove from heat again and lightly cool the sauce by stirring.
- Heat a deep skillet over medium heat. Add spinach and 1 tsp salt, cover and cook for about 3 minutes. Stir with tongs and continue to simmer without a lid for about 2 more min Drain and cool slightly, then squeeze well spinach. Coarsely chop.
- Gently heat the sauce, then stir the whole egg and egg the yolks. Cook, stirring, until the sauce thickens. Add spinach, warm. Salt and pepper.
