Spinach in a creamy sauce

Ingredients for the recipe:

  • 900 g spinach (remove coarse stems)
  • 3 tbsp. l (45 gr.) Unsalted butter
  • 1/4 Art. premium wheat flour
  • 2.5 tbsp. milk at room temperature
  • Coarse salt
  • 1/2 tsp freshly grated nutmeg
  • 1 egg of category CO, plus 2 egg yolks
  • Freshly ground pepper

Recipe preparation:

  1. Melt the butter in a skillet over medium heat. Add flour and knead until smooth. Cook while stirring until mixture does not brighten, about 1 min. Remove from heat, add milk, 2 tsp. salt and nutmeg. Put on medium heat again and bring to a boil, stirring constantly. Remove from heat again and lightly cool the sauce by stirring.
  2. Heat a deep skillet over medium heat. Add spinach and 1 tsp salt, cover and cook for about 3 minutes. Stir with tongs and continue to simmer without a lid for about 2 more min Drain and cool slightly, then squeeze well spinach. Coarsely chop.
  3. Gently heat the sauce, then stir the whole egg and egg the yolks. Cook, stirring, until the sauce thickens. Add spinach, warm. Salt and pepper.
