Spinach and almond crostini

Ingredients for the recipe:

  • 450 gr fresh spinach, washed, dried and cropped
  • 1 clove of garlic
  • 3/4 Art. sour cream
  • 1/4 Art. chopped roasted almonds and optionally for filing
  • 1 tsp chopped parsley
  • 1 tsp chopped thyme
  • 1 tsp chopped chives
  • 1/8 tsp cayenne pepper
  • Juice and zest of half a lemon
  • Toasted baguette slices for serving

Recipe preparation:

  1. In a double boiler basket installed over 2.5 cm of boiling water, boil the spinach for a couple of minutes so that it wilts. Lay out spinach and squeeze out the water thoroughly.
  2. Put spinach and garlic in a food processor and chop until obtaining a homogeneous mass. Add sour cream, almonds, parsley, thyme, green onion, cayenne pepper and 1/8 tsp. salt. Chop. Stir in the lemon zest and lemon juice.
  3. Put the spinach mixture on the toasted bread, sprinkle chopped almonds and serve.
