Spaghetti Pumpkin in Alfredo Sauce with Pancetta and green peas

Spaghetti pumpkin vegetable paste with Italian cream sauce Alfredo is as tasty as traditional pasta, but more healthy. Bake the pumpkin until ready and divide its pulp into fibers in kind of noodles.   • 120 gr. pancetta, diced (approximately 3/4 tbsp.)
  • 1 small shallot, diced
  • 1 tsp chopped fresh thyme
  • 1/4 Art. dry white wine
  • 1.5 tbsp. fat cream
  • A pinch of grated nutmeg
  • 1 tbsp. frozen peas, thaw
  • 0.5 tbsp. grated parmesan cheese (approx. 30 gr.)
  • 2 tbsp. l finely chopped fresh parsley

Recipe preparation:

  1. Preheat the oven to 200 ° C. Cut the pumpkin in half and peel from the seeds. Bake and then split into fibers (read more About How to Make Spaghetti Pumpkin).
  2. Meanwhile, fry in a large skillet over medium heat pancetta, stirring, until crisp, about 6 minutes. Place the slotted spoon on a plate covered with a paper towel; set aside. Pour shallots and thyme into the pan and fry until soft, about 2 minutes. Stir in the wine and cook, scraping sticky pieces from the bottom of the pan until most wine does not evaporate, about 1 minute. Add cream, nutmeg, 0.5 tsp salt and a little pepper.
  3. Increase heat to moderate and simmer periodically. stirring until the sauce thickens, about 3 minutes. Then intervene peas and parmesan. Continue cooking until the sauce is thick and cream, about 1 more minute. Remove from the stove.
