Shrimp Jambalaya

Ingredients for the recipe:

  • 900 gr. medium sized shrimp, peel and shell to leave
  • 450 gr smoked pork sausage, chopped
  • 1 can (400 gr.) White beans
  • 1 tbsp. groats farro
  • 2 green peppers, without seeds, diced
  • 3 stalks of celery, diced
  • 1 onion, diced
  • A pinch of crushed red pepper
  • 3 cloves of chopped garlic
  • 800 gr. diced tomatoes
  • 1 tsp cayenne pepper
  • 2 tbsp. long grain rice
  • 2 fresh bay leaves
  • 1 bunch fresh thyme
  • 5 green onion feathers, finely chop the white and green parts, for serving

Recipe preparation:

  1. Make Shrimp Shell Broth: Put shell in a large pot and fill with water. Bring water to boil, turn off the heat and leave at least 15-20 min., can be longer. Strain the broth and discard the shell. in a pan olive oil and heat on a medium high temperature. Add the sausage and sauté for 4 to 5 minutes, or until the sausage starts to brown. Add peppers, celery and season onion with salt and crushed red pepper. Cook from 7 to 8 minutes or until the mixture softens and becomes very fragrant. Add the garlic and fry for another 2 to 3 minutes. Add tomatoes and cayenne pepper. Stir the mixture with rice.
  2. Add 4 tbsp. shrimp broth, bay leaf and bunch thyme. Taste the dish and season with salt. Add cereal farro, cover and simmer over medium heat for 25 min. Stir with shrimp and beans, and cook for another 5-7 minutes. or until the prawns turn pink. Serve the jambalaya with chopped green onions.
