Shrimp Fritters with Sauce gherkins

  • 2 eggs, proteins separately from the yolks

  • 1 tbsp. diced zucchini
  • 1 clove garlic, minced
  • Half chopped jalapeno pod
  • 1 tbsp. flour
  • 1 tsp baking powder
  • 0.5 tsp smoked paprika
  • Approximately 2/3 Art. yogurt

Recipe preparation:

  1. Gherkin sauce: in a small bowl, mix mayonnaise, gherkins, Dijon mustard, mustard powder, tarragon and lemon the juice. Salt and pepper.
  2. Shrimp fritters: heat in a pan with a thick bottom about 4 cm. vegetable oil to a temperature of 175 ° C per thermometer for deep fat.
  3. In a small bowl, beat the egg whites to medium peaks. Вin a separate bowl, mix shrimp, onions, zucchini, garlic and jalapenos.
  4. In a medium-sized bowl, whisk the flour, baking powder, and paprika. Stir in egg yolks and yogurt enough to knead a rather thick dough (adjust the amount yogurt). Salt and pepper. Stir in the shrimp dough mixture and then egg whites.
  5. A tablespoon put the dough in oil, 1 tbsp. l for each fritter. Cook until golden, about 5 minutes, then put on paper towels. Salt immediately. Serve with gherkin sauce.
