Sandwiches “Hunting chicken sub”

Ingredients for the recipe:

  • 4 pieces of chicken breast without skin and bone, 200 – 250 gr. each
  • Olive oil to sprinkle chicken + 2 tbsp. l
  • Grill seasoning mix or salt and pepper
  • 4 sub sandwich buns cut in half
  • 2 garlic cloves, peeled
  • 1 tsp red pepper flakes
  • 2 large champignon caps, chopped
  • 1 sweet green pepper, peeled and chopped
  • 1 large onion, chopped
  • 1 tsp dried oregano, 1/3 of a handful
  • 0.5 tbsp. dry red wine or chicken or beef broth
  • 1 can (400 gr.) Mashed tomatoes
  • 2 – 3 tbsp. l chopped parsley
  • 150 gr. thinly sliced provolone cheese

Recipe preparation:

  1. Heat a grill pan or large pan. Sprinkle butter the chicken and grate the seasoning mixture with grill or salt with pepper. Fry in a pan for 6 minutes on each side.
  2. Preheat the oven with the grill function and lightly fry on nasty buns.
  3. Heat a large frying pan over moderate heat. Add 2 tbsp. l olive oil, garlic, red pepper flakes, mushrooms, sweet peppers, onions and oregano. Fry vegetables, salt and pepper. Cook for 5 minutes, then pour wine or broth into the pan. Scrape the bottom of the pan with a wooden spoon or spatula to scrape off sticky pieces. Add tomatoes and parsley.
  4. Slice the chicken breasts at an angle and place in the sauce. Put chicken and vegetables into cut buns and cover with raw provolone. Fry in the oven to melt the cheese and serve.
