This version of the dish is Ropa Vieha (translated as “old rags”) – Cuban beef fiber dish in spicy tomato sauce, has such a rich, deep aroma, which you could not expect from a dish cooked in the microwave. You you don’t have to pre-fry the meat, just put it out in the sauce until soft so that it can be divided into fibers. Serve with rice, which can be mixed with sauce. Ingredients for the recipe:
- 570 gr. sliced along the fibers with strips of 8×4 cm. pulp beef flank
- 1/3 Art. halved olives stuffed with pepper pimento
- 1/2 tbsp. sliced canned baked red pepper
- 1 can (400 gr.) Pulp of tomatoes
- 1 sliced in half rings 0.5 cm thick. Small head onions
- 3 minced cloves of garlic
- 1 tsp ground cumin
- 1/4 tsp dried oregano
- 2 tbsp. l olive oil
- Salt and ground black pepper
- 1 tbsp. low salt beef broth
- 2 tsp soy sauce
- 1 dried bay leaf
- 3 tbsp. l coarsely chopped fresh cilantro leaves
- Boiled rice for serving

Recipe preparation:
- In a bowl suitable for use in a microwave, 4 liter mix onion, garlic, cumin, oregano, oil, 1/2 tsp. salt and a few peas of black pepper. Cover the bowl tightly with cling film, with the tip of a knife, make a small steam outlet. Heat at 100% power until soft and onion transparency, about 4 min. (See culinary advice on cooking time.) If the onion is not ready, cover the bowl and heat in intervals of 30 seconds. (When you shoot the film, be be careful not to burn yourself with steam.)
- Add tomatoes, beef broth, red pepper, soy sauce, bay leaf, 1/2 tsp salt and a little black pepper. Shuffle then put the meat. Cover the bowl tightly with 2 pieces of food films. Make a small hole in the center. Put in microwave (at 100% power) for 20 minutes. Take off carefully cling film (the bowl will be very hot), mix well again cover. Put in the microwave (at 100% power) for another 20 min Open the bowl and let cool for 5 minutes.
- Remove the meat with a slotted spoon and lay it on a cutting board. (On at this stage, it will not be so tender as to break up into pieces, but should be such that it can be divided into fiber.) With two forks, divide the meat into pieces, put it back in bowl and add olives. Cover the bowl tightly with cling film, cut a small hole in the center and place the bowl in microwave (at 100% power) for 5 minutes. Give ropa vieha stand under the film for 5 minutes. Add cilantro and serve with rice.
