Ingredients for the recipe:

For marinade:

  • 5 liters of water
  • 125 gr. coarse salt
  • 3 tbsp. l black pepper peas
  • 1 cinnamon stick
  • 1 tbsp. l caraway seeds
  • 4 clove buds
  • 2 tbsp. l whole pepper
  • 4 fruits anise star
  • 2 tbsp. l white mustard seeds
  • 200 gr. Sahara
  • 2 onions, cut into four parts
  • 1 ginger root, peel and cut into 6 slices
  • 4 tbsp. l maple syrup
  • 4 tbsp. l honey
  • 5 sprigs of parsley, chopped
  • 1 orange juice

For the sauce:

  • 75 gr. butter
  • 3 tbsp. l maple syrup

1 (4-5 kg.) Turkey

Recipe preparation:

  1. Cook turkey marinade: pour into large capacity of 5 liters of water add salt, pepper peas, cinnamon, caraway seeds, cloves, allspice, star anise, mustard seeds, sugar, onions onions, ginger root, maple syrup, honey, parsley, orange juice, mix thoroughly to dissolve the salt and sugar.
  2. Pickle a turkey: gut and wash the turkey, put in the marinade, if the turkey is not fully loaded, add more water. Put the container with the turkey in a cold place for 1-2 of the day. Remove the turkey from the marinade 40-50 minutes before baking and dry with a paper towel.
  3. Prepare the sauce: melt the butter in a saucepan and add maple syrup, mix until smooth.
  4. Cook the turkey: preheat the oven to 220 C. Grate turkey with sauce and put in the very bottom of the oven, bake 30 minutes, then reduce the temperature to 180 C. and continue to bake 2.5-3 hours, periodically pouring sauce. To check the readiness of the turkey, you need to pierce with a knife between the body and the leg, highlighted juice should be transparent. Remove the turkey from the oven and let stand 20 min.
