- In a bowl, mix ricotta with olive oil, salt and pepper. Add thyme leaves and mix well.
- Grease the baking tins with oil (you can use portioned, but can be done in one big one).
- Put spinach leaves on the bottom of the baking dish. On spinach put ricotta.
- Break eggs on two sides of the cheese.
- Bake in an oven preheated to 220 degrees for about 20 min
