Pumpkin and walnut soup with wild rice.
After Thanksgiving there is always an extra jar Canned Pumpkin Puree. Add it to this very fragrant soup. This recipe uses traditional methods making mashed pumpkin soups (part of nuts, part of tomato curry paste). If you do not have wild rice, use 1/2 tbsp. any cereals that you have.
Time: 1 hour. 25 minutes Difficulty: easy Servings: 4 Measured containers are used in recipes volume: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2cups (st.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (Art.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.
Ingredients for the recipe:
- 1/2 tbsp. wild rice mixes
- 4 tbsp. l raisins
- 4 tbsp. l cider vinegar
- 1/2 tbsp. coarsely chopped fried cashews, almonds or peanuts
- 3 tbsp. l tomato paste
- 2 tsp curry powder
- 2 tsp onion powder
- 1/4 tsp red pepper flakes as well as more for decoration
- 2 tbsp. l olive oil
- 4 tbsp. chicken broth
- 450 gr pumpkin puree

Recipe preparation:
- In a small saucepan, bring the water to a boil. Add rice and simmer until cooked, 30 to 40 minutes. Drain liquid and let cool.
- Mix 2 tbsp. l raisins and 1 tbsp. l apple cider vinegar in a little a bowl. Leave at room temperature until serving.
- Add 1/4 tbsp. To the food processor nuts remaining 3 tbsp. l vinegar and 2 tbsp. l raisins, 2 tbsp. l water, tomato paste, powder curry, onion powder, red pepper flakes and 1.5 tsp. salt grind to a pasty state, scraping it from the sides of the bowl as needed.
- Heat the oil in a medium saucepan over medium heat. Add the pasta and cook, stirring frequently, until the butter begins detach, and the paste will get a brick color, from 6 to 8 minutes. Add some water if the paste sticks to the bottom. pans. Add chicken stock, pumpkin puree and 1 tbsp. water and mix well.
