- 1 tsp saffron (stigmas)
- 1 tbsp. pistu, see recipe below
- Grated Parmesan cheese, served
Pistu:
- 4 large cloves of garlic
- 1/4 Art. tomato paste
- 24 large basil leaves
- 1/2 tbsp. grated parmesan
- 1/2 tbsp. good quality olive oil

Recipe preparation:
- In a large soup pan, heat the olive oil, put onions and fry on low heat for 10 minutes, or until onions will become transparent. Add leeks, potatoes, carrots, salt, pepper and fry over medium heat for another 5 minutes. Pour in chicken broth, put saffron, bring to a boil and cook without covering lid, for 30 minutes, or until the vegetables are soft.
