Recipe preparation:
- Dissolve pressed yeast 0.5 tbsp. warm water (not hot). Add 2 tbsp. warm skim milk (or boiled whole milk, slightly cooled), 3 tbsp. flour and 1 hour l salt. Mix and set aside so that the yeast bloomed.
- In a separate bowl, combine 12 fresh eggs, sugar, and lemon juice. Beat well and then add melted butter. Add the yeast mixture, the remaining flour and 2 tbsp. l salt. Knead dough and let it rest 10-20 minutes.
- Keep kneading with a mixer until the dough starts to lag behind bowls, or knead with oiled hands until the dough is lag behind hands.
