  1. From a piece of pork make a single layer about 2 cm thick, slicing meat in a spiral.

  6. Wrap the meat in a tight roll, dress with culinary thread. Sprinkle with spices on top and lay thyme sprigs.
  7. Wrap in foil and put in the oven for 80 minutes, preheated to 200 degrees. 10 minutes before meat is ready can be opened to make it brown.
