  1. Cut the apples into slices, onions – large, peeled carrots – in circles, cut the heads of garlic in half, prunes rinse and spread everything on the bottom of the clay pot Tajine or ordinary pot. Add the branches of thyme and rosemary.

  2. We wash a piece of pork peritoneum and wipe it with paper towels. On a prepared piece of pork belly from the skin make longitudinal sections and rub with salt. Put the pork on the prepared “pillow” with the skin up, cover the pot and place in the oven, preheated to 200 degrees, for 30 minutes.

  3. Then reduce to 180 degrees and bake another 1.5 hours. For 30 minutes before cooking, remove the cover and bake so that the skin peritoneum covered with a brown crust.

  4. We take out the fragrant peritoneum, leave it for 10 minutes, then chop and serve with a vegetable side dish and fresh bread.
