Pork loin cutlets with apple sauce

  • 2 tbsp. natural apple juice or cider, plus some more for frying
  • 2 tsp lemon juice
  • 225 gr. (handful) light raisins
  • A slice of fresh ginger root 2.5 cm
  • 3 tbsp. l light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 2 tbsp. l cooking oil or olive oil
  • Salt and pepper
  • 2 tbsp. l (30 gr.) Butter

Recipe preparation:

  1. Place a medium-sized pot on a moderately high heat, put apples, raisins, ginger, brown sugar, cinnamon and nutmeg, and pour in apple and lemon juice, cook until forming a sauce with slices of 10-12 minutes, stirring occasionally. If the sauce starts to bubble and splatter, reduce the heat a little, but it should not be cooked for a long time. Once the apples are soft, and sauce is formed, remove the pan from the heat.
  2. Preheat a large non-stick pan moderately high heat. Add oil. Salt and pepper pork on the one hand. Place the meat in a pan with tongs, seasoned side down. Salt and pepper the other side loin. Cook meat for 2 minutes. on each side to brown color and caramelize, then reduce heat to medium and cook another 5-6 minutes., periodically turning over until the juice will become transparent.
