Pinto Beans with Meat Cinder

Beans

  • A few glasses of smoked brisket
  • Two cans (430 grams each). Pinto beans, drain the liquid, beans rinse
  • 250 gr smoked bacon, diced
  • 2 tbsp. l rapeseed oil
  • 1 medium carrot grated on a coarse grater
  • 1 medium onion, diced
  • 3 garlic cloves, finely chopped
  • 2 tbsp. barbecue sauce, see recipe below
  • 1 – 2 tbsp. chicken stock and a little more if necessary
  • 1/4 Art. clover honey
  • 3 tbsp. l brown sugar
  • Bunch of parsley leaves

Barbecue sauce

  • 30 gr butter
  • Half medium red onion, chopped into small pieces cubes
  • 3 cloves, minced garlic
  • 6 Tomatoes Cream, roughly chopped
  • 1/4 Art. ketchup
  • 3 tbsp. l molasses
  • 2 tbsp. l Dijon mustard
  • 2 tbsp. l brown sugar
  • 1 tbsp. l honey
  • 1 tsp cayenne pepper
  • 1 tbsp. l chili powder with pepper anchovy
  • 1 tbsp. l chili powder with pasilla
  • 1 tbsp. l paprika
  • 1 tbsp. l Worcester sauce

Recipe preparation:

  1. In a medium-sized cast iron over medium heat, heat rapeseed butter and sprinkle bacon. Fry until crisp. Add carrots and onions and fry for about 5 minutes until soft. Then add garlic, fry another 1 minute. Pour the beans into the pan, pour ketchup, chicken stock, honey and sugar. Everything is neat mix, salt and pepper to taste.
  2. Cover and simmer for about 20 minutes. Then check if the mixture is dry, add a little broth. Keep going simmer another 15 minutes until lightly thickened. Stir in the cinder. Ready Sprinkle the dish with parsley and leave for 10 minutes. Then serve.

    Barbecue sauce

    In a large saucepan over medium heat, melt the butter and fry onions and garlic until translucent, about 3 minutes. Add the tomatoes and simmer for 15 minutes. Then add all remaining ingredients and simmer another 20 minutes. Grind the sauce with using a food processor, pour into a bowl and let cool to room temperature. The sauce can be stored in the refrigerator for weeks or freeze.
