If you want to treat yourself and loved ones to this famous Chinese dish, but no way to cook duck at home Peking in a traditional way (it’s quite complicated technology), try this simplified recipe. It turns out very yummy!

  1. Rinse the duck carcass well. Scalp twice with boiling water. Grate outside and inside with salt. Put in a dish with a lid and put in refrigerator for 4-5 hours (can be left overnight).
  2. Pour 3 tablespoons of soy sauce, 1 tablespoon into a mug honey and 2 tablespoons of sesame oil. Mix well. Coat the duck inside and out. Allow to stand for another 1 hour.
  3. Pour some water into the abdomen of the duck. Sew all holes.
  4. Pour water into the pan. Put a wire rack over the pan. On wire rack to place the duck. Leave in the oven, preheated to 220 degrees. Cook for 1 hour.
  5. Reduce the fire to 180 degrees. Cook another 1 hour until cooked (i.e. until the duck’s carcass becomes golden, and the juice flowing from it – transparent).
  6. Serve the duck, cut into pieces, with rice cakes, long slices of cucumber, green onions and various sauces.
