  • 2 plum tomatoes

  • 1 tbsp. finished mayonnaise
  • 3 cloves garlic
  • 2 tsp paprika
  • 2 tsp pureed chipotle in adobo sauce
  • 2 tbsp. l finely chopped fresh parsley

Recipe preparation:

  1. Put the potatoes in a large pot of water, add 2 tbsp. l salt and cook until the potatoes are soft, but not will fall apart, about 12-15 minutes. Drain, let the potatoes cool and cut each tuber into 2 cm circles.
  2. Heat the grill. Lubricate the tomatoes a little oil, salt and pepper. While cooked potatoes, put the tomatoes on the grill and sauté until they are charred from all sides and will not become soft, about 10 minutes. When the skin is charred, remove the tomatoes from the grill. Put the tomatoes, mayonnaise, garlic, paprika and chipotle pepper in a food processor and whisk until smooth. Salt and pepper. It’s possible done in advance, for 1 one day, and store the sauce in the fridge.
  3. Lubricate the potato slices on both sides with a small amount. oil, salt and pepper. Put the potatoes on the grill, close cover and fry until golden brown and cooked, about 2 minutes from each side. Gently shift the potatoes on a dish and sprinkle with parsley. Serve by potato sauce aioli or by submitting it separately.
