Panini with Spanish ham and pesto – a detailed recipe cooking. Time: 10 мин.Difficulty: easy Servings: 4 Measured containers are used in recipes volume: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cups (st.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (Art.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.
Ingredients for the recipe:
- 8 slices of ciabatta bread
- 4 pequillo peppers or 2 whole red peppers
- 1 large eggplant, cut into slices
- 340 gr thinly sliced Manchego cheese
- 225 gr. sliced ham (see spanish recipe ham)
- 2 tbsp. fresh basil leaves
- 1/3 Art. parmesan cheese
- 110 gr. soft goat cheese
- 1/3 Art. pine nuts (or sunflower seeds, walnuts nuts, almonds)
- 3 cloves of garlic
- Salt to taste
- 1/4 Art. olive oil

Recipe preparation:
- Make Pesto Sauce: Mix in a Food Processor basil, parmesan, pine nuts, garlic and salt. In the hole pour olive oil slowly, without stopping whipping. Leave in side. Preheat the grill. Put the pepper on the wire rack and cook, turning until the skin is charred. Cool, clean from peel, seed, and cut into strips. While the peppers are preparing, grease slices of eggplant oil, season with salt and pepper. Cook on grill for about 4 minutes. from each side.
- Preheat the grill pan over medium heat. Collect sandwiches: spread pesto on one slice of bread, put slices of pepper and eggplant, goat cheese and ham. Hold it down the other half of the bread. Put the sandwiches in the pan and press down with a brick wrapped in foil or a heavy frying pan and fry until a crust and characteristic stripes appear until the cheese will melt in 3-4 minutes. from each side. Cut the sandwiches into 3 pieces each and serve as a snack for any meal food.
