Wash dried apricots 1 hour before cooking and soak in warm water. Put the prepared dried apricots in a blender bowl, peeled garlic, rosemary, thyme, chili flakes, mustard, salt (1 tsp), ground pepper (½ tsp) and chop everything.

Wash the pork ham, soak it with paper napkins, put in a mold and rub on top and sides of the prepared mustard mixture. Cover the piece with foil and send to refrigerator for 2-3 hours, preferably at night.

Preheat the oven at 160 degrees and put the pickle in it ham under the foil. We bake boiled pork for 1 hour, then remove the foil and cook another 30 minutes.
